(Serves 2)
- 4 organic skinless chicken thighs
- 1 sweet yellow onion
- 1 clove of garlic
- 1 rosemary sprig
- 20-25 organic cherry tomatoes
- 4 Tbsp. Evoo
- Salt
- Pepper
Peel the onion and cut it in eight slices. Peel the garlic, cut it in half and remove its green core.
Warm up the oil in a pan and sauté the onion and garlic, for 2-3 minutes.
Meanwhile, wash the chicken thighs and pat them dry. Brown the chicken evenly in the pan for on medium-high heat for 3-4 minutes on each sides, add the rosemary, salt and pepper. Cover with a lid and cook for 10 minutes.
Wash the tomatoes, cut them in half and add them to the chicken. Keep cooking covered, on low heat, until the tomatoes start wilting.
Uncover, let any remaining liquid evaporate and serve warm.
N.B. Chicken is cooked when internal temperature is 165F.
