Black rice is also known as ‘Forbidden Rice’ since in ancient China it was reserved only for the Emperors because of its remarkable nutritious properties and health benefits.
Its unique black-purplish color is due to a pigment called anthocyanin, which has potent antioxidant properties that can help prevent cardiovascular disease, restricting free radical movements which can cause variety of diseases like diabetes and even cancer. It’s also rich in fiber and has a higher protein content than white rice.
This easy recipe makes a quick side dish to pair with your meat and fish entrees.
Ingredients: A V B Gf Ef
(serves 4 people)
- 1 cup of black rice
- 1 ¾ cups of water
- 1 Tbsp. butter
- 1 lemon
- 1 tsp. salt
Combine the rice, water and salt in a pot, and bring to a boil. Then cover, reduce heat and simmer for 30 minutes. Remove from heat and let sit for a few minutes.
Cut the butter into small pieces in a serving bowl, then add the cooked rice.
Wash and dry the lemon and grate the lemon rind on the rice, toss well and serve warm.
